Spinach Strawberry Goat Cheese Salad with Poppy Seed Dressing

Spinach Strawberry Goat Cheese Salad with Poppy Seed Dressing is an irresistible flavor combination of fresh baby spinach, sweet strawberries, creamy goat cheese, sliced avocados and a homemade poppy seed dressing.

I’m SO in love with this Spinach Strawberry Goat Cheese Salad! The fresh flavor combination in this salad is amazing. And I’ve also added avocados, which makes it even better!

I’m not sure how many times I have made this salad over the summer, but who’s counting? I can’t get enough of it and it’s so flavorful and healthy.

Not only is this recipe great for lunch, but you can bring it to a picnic or a barbecue. Everyone loves it!

Ingredients

For the poppy seed dressing

  • 3/4 cup (172g) mayonnaise
  • 1 1/2 tbsp apple cider vinegar
  • 1 tbsp milk
  • 1/4 cup (50g) sugar
  • 2 tsp poppy seeds
Ingredients for poppy seed dressing mise en place

For the salad

  • 6 oz (23g) fresh baby spinach
  • 2 cups (400g) sliced strawberries
  • 4 oz (28 g) goat cheese, crumbled
  • 1 medium, ripe Hass avocado (100g), sliced
  • 1 cup (42g) seasoned croutons (not pictured here)

Instructions

For the poppy seed dressing

  • Add mayonnaise, apple cider vinegar, milk, sugar and poppy seeds to a 16-ounce mason jar or any lidded container and shake ingredients until combined. (If you don’t have a container with a lid, you can whisk the ingredients together in a bowl.)

For the salad

  • Add the spinach, strawberries, goat cheese, avocado and croutons to a large salad bowl.
  • Pour the desired amount of dressing over the salad and toss.
  • Enjoy!

Notes
Salad is best eaten on the day that it is made but you can save it, covered, for up to 2 days in the refrigerator. It will be better left over if you have not tossed it with the dressing.
