Ingredients
  

For the poppy seed dressing

  • 3/4 cup (172g) mayonnaise
  • 1 1/2 tbsp apple cider vinegar
  • 1 tbsp milk
  • 1/4 cup (50g) sugar
  • 2 tsp poppy seeds

For the salad

  • 6 oz (23g) fresh baby spinach, washed
  • 2 cups (400g) fresh, sliced strawberries
  • 4 oz (28g) goat cheese, crumbled
  • 1 medium (100g) ripe, Hass avacado, sliced
  • 1 cup (42g) seasoned croutons
Instructions
 

For the poppy seed dressing

  • Add mayonnaise, apple cider vinegar, milk, sugar and poppy seeds to a 16-ounce mason jar or any lidded container and shake ingredients until combined. (If you don't have a container with a lid, you can whisk the ingredients together in a bowl.)

For the salad

  • Add the spinach, strawberries, goat cheese, avocado and croutons to a large salad bowl.
  • Pour the desired amount of dressing over the salad and toss.
  • Enjoy!
Notes
Salad is best eaten on the day that it is made but you can save it, covered, for up to 2 days in the refrigerator. It will be better left over if you have not tossed it with the dressing.
