My So Easy Tomato Beef Kluski is a one-pot, hearty, quick and easy dinner made with egg noodle pasta, ground beef, onions, tomato juice, garlic powder, beef bouillon, salt and pepper. Perfect for a weeknight dinner!

So Easy Tomato Beef Kluski is a simple and tasty one-pot recipe you will want to add to your regular dinner rotation.
My sweet mother-in-law, Diane, gave me the idea for this recipe when my kids were little. She knew I was always looking for something quick and easy to make for dinner after work and this was perfect!
I’m pretty sure this recipe was originally made with original Kluski egg noodles, which are very similar to regular egg noodles, but made with more egg. I prefer the egg noodles because they are easier to find. Feel free to use original Kluski noodles if you want.
This is by no means a fancy recipe, but it is delicious, great for picky eaters and comes together so quick! The noodles actually cook in the tomato juice.
Here’s what you will need:
Table of Contents
Ingredients
- 1 lb (454g) ground beef (I use 85/15 ratio.)
- 1/2 cup (58g) yellow onion, chopped
- 1 12-oz bag of egg or Kluski egg noodles
- 64 oz (2 Qt) tomato juice
- 1 envelope of beef bouillon powder or 2 beef bouillon cubes
- 1 tsp garlic powder
- 1/2 tsp salt
- 1/4 tsp black pepper
- Parmesan cheese for topping, if desired

Instructions
- In a large sauce pan or Dutch oven, brown ground beef with onions on medium heat until the beef is no longer pink.
- Drain fat from beef.
- Add noodles, tomato juice, beef bouillon, garlic powder, salt and pepper to the pot with the beef and onions. Stir until combined.
- Bring to a boil and then reduce heat to low and cover.
- Stir occasionally and also make sure the heat is high enough for a simmer.
- Simmer for 20 minutes or until pasta is al dente.
- Serve and enjoy!
