Leprechaun Bait Snack Mix is a sweet and salty snack mix made with Chex and Lucky Charms cereals, pretzels, peanuts, M&M’s candies and then mixed with melted white chocolate. You are guaranteed to catch ALL of the leprechauns with this recipe!


When St. Patrick’s Day rolls around, I LOVE to make this Leprechaun Bait Snack Mix. It’s a fun recipe to share with the kiddos, but adults love it just as much. It’s also so easy to make, festive and delicious!!
If you like a sweet and salty combo, this snack is for you! I seriously call it crack because it’s so addictive. Be prepared to share it, because if you don’t, you will eat the entire batch yourself. I may or may not be speaking from experience.
I usually prefer regular M&M’s for this recipe, but you can use any flavor your heart desires. I actually found dark chocolate minty ones this time and they are different shades of green. Perfection!
Here is what you will need:

Ingredients
- 2 cups (66g) Corn or Rice Chex Cereal
- 2 cups (72g) Lucky Charms Cereal
- 1 1/2 cups (50g) pretzels (I used small twists but sticks also work well.)
- 1 cup (125g) salted peanuts
- 1 cup (160g) white chocolate chips
- 1 tablespoon vegetable shortening
- 1 cup (170g) M&M’s candies

Instructions


Step 1. Line a 9 x 13-inch baking dish with parchment or waxed paper. If you don’t have either, you can spray the dish with non-stick cooking spray.
Step 2. In an extra large bowl or pot, mix together cereals, pretzels, peanuts and half of the M&M’s candies. You will be adding the rest of the M&M’s at the end.
Step 3. Add white chocolate chips and vegetable shortening to a glass bowl or measuring cup. Microwave chips and shortening in 30-second increments, stirring in between, until completely melted.


Step 4. Pour melted white chocolate into the cereal mixture and mix until everything looks evenly coated.



Step 5. Pour the snack mix evenly into the baking dish and cool in the refrigerator for 10 minutes.
Step 6. Sprinkle the other half of the M&M’s over the snack mix.
Step 7. Break the mix apart, serve and enjoy!

Notes
Variations
Feel free to make this recipe your own. You can also double the recipe if you’re serving a large party. You can substitute popcorn for part of the cereal. You can substitute the peanuts for a different kind of nut. You can use different flavors of M&M’s. The sky’s the limit!
I love to make this snack mix for the different holidays. You would just add Cheerios instead of Lucky Charms and just change up the color of the M&M’s. Have fun and enjoy!
