Equipment
  • large 6-qt saucepan
  • 9 x 13-inch baking dish
  • Rubber/silicone spatula
  • large spoon
Ingredients

  • 8 tbsp (113g) butter, 1/2 cup (1 stick) Plus 1 tablespoon if you're buttering the pan instead of using non-stick cooking spray
  • 20 oz (567g) mini marshmallows, 11 cups (divided, reserve 5 oz to mix in at the end)
  • 8 cups (285g) Lucky Charms cereal
  • 2 cups (56g) Rice Krispies cereal
  • non-stick cooking spray or butter to grease the pan
Instructions

  • Spray a 9 x 13-inch baking dish or pan with non-stick cooking spray. Set aside.
  • Melt butter in a large saucepan on low heat.
  • Once the butter is completely melted add 15 oz (1 1/2 bags if you’re using two 10 oz bags) of the marshmallows. (Add the remaining 5 oz of marshmallows later.)
  • Keep heat on low and melt marshmallows, stirring often and scraping the bottom of the pot with a rubber/silicone spatula or a wooden spoon.
  • Add both cereals to the saucepan with the melted butter and marshmallows and mix together with a large rubber/silicone spatula or a large spoon until combined.
  • Add the remaining 5 oz of unmelted marshmallows and mix with the cereal mixture until combined.
  • Add treat mixture to your prepared 9 x 13-inch baking dish and spray your hand with non-stick cooking spray (or use butter or shortening).
  • Lightly press treats down evenly with your hand. Don’t press them hard or compact them. You want them to be light.
  • Cover with plastic wrap for at least 1 hour. Cut into 12 even squares with a sharp knife.
  • Enjoy!
