Easy Parmesan Roasted Asparagus

Easy Parmesan Roasted Asparagus is fresh asparagus topped with olive oil, salt and pepper, freshly grated parmesan cheese that is roasted in the oven for a delicious and quick side dish.

Equipment
  • 9 x 13-inch baking dish or pan (Or a large baking sheet)
  • Oil mister, optional
  • cheese grater
Ingredients
  
  • 6 oz (175g) fresh asparagus
  • non-stick cooking spray (if you do not have an oil mister)
  • 1 1/2 tablespoons olive oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 3/4 cup (67g) fresh parmesan cheese, grated If you're using the powdered grated parmesan from a container or jar, I would use 1/2 cup.
Instructions
 
  • Preheat oven to 450°F.
  • Grate parmesan cheese and set aside.
  • Spray a 9 x 13-inch baking dish or a large baking sheet with olive oil or non-stick cooking spray.
  • Rinse asparagus with water and drain on paper towels.
  • Grab about 1/4 of the asparagus bunch in your hands at a time. With both hands, snap off the ends of the asparagus and then place in your prepared baking dish or on your baking sheet. Repeat until done.
    You can also cut the ends right above where the stalks turn from white to green instead of snapping them off.
  • Drizzle olive oil evenly over the asparagus.
  • Add salt and pepper.
  • Sprinkle grated parmesan over the asparagus.
  • Bake for 15-20 minutes until asparagus is lightly browned. (For thick asparagus spears (about 3/4 inch to 1 inch thick), you may need to bake them for 20-25 minutes.)
  • Serve and enjoy!
Notes
Store leftover asparagus covered in the refrigerator for up to 5 days.
Roasted asparagus can be frozen up to 3 months in an airtight freezer bag or container.
